Wild Strawberry ~ Herbal ~ Textural

Harvested from 25 year old, south facing, free standing bush vines planted on calcareous clay planted as free standing bushes. The entire parcel is farmed without the use of machinery. Destemmed & crushed grapes ferment and macerate for 6 days in stainless steel. Pressed
at the end of Primary (alcoholic) fermentation. Decanted to remove gross lees, left to rest in stainless steel before bottling in the spring following harvest.
