Hand-harvest ed from morainic and clay-rich soils between Colle Umberto and San Fior. Spontaneous fermentation in stainless steel with indigenous yeasts, aged six months on lees, then bottled for natural refermentation. Unfiltered, no dosage, minimal sulphur.
