Empreinte 2021

Catherine’s flagship wine was first produced under her own name, with her fingerprint on the label. Sandstone soil was hand-harvested in small 20 kg boxes. Whole cluster maceration for two weeks with the addition of a percentage of direct press juice as a reaction to the vintage in 2021, 1 pump over a day. The press & free-run juice are vinified together. Elevage on fine lees in older burgundy barrels for ten months. No racking during the elevage. Wines are bottled without any fining, filtration or added S02.
