A vintage of late ripening, three weeks later than in 2020. Catherine chose to stay patient and only harvest at full ripeness. In Catherine’s own words, fermentation was smoother than ever – “In 2021, I was able to make a fresh and clear wine that is typical of the old northern Alsace for the first time in a long time!” Sandstone soil was hand-harvested in small 20 kg boxes. Slow and long press (8h). Alcoholic & malolactic fermentation in burgundy barrels (neutral barrels, at least 5 to 7 years old), elevage on lees for ten months, no racking during elevage, no filtration, unfined, no SO2 added.
