Troma-Onirique 2022

Lemon Zest ~ Saline ~ Silky

A blend of 70% Xarel.lo and 30% Aligoté, harvested from vines planted in Catalunya, farmed respectfully without chemicals. Harvested by hand. Aligoté is fermented and aged in amphora for 7 months and Xarel.lo in foudre for 7 months before blending and ageing for a month and a half in stainless steel before bottling in François’ cellar in Mailly-le-Château, Burgundy.
